Cut the stems off the baigan and chop them.

Prepare a paste with 1 tablespoon garlic paste, 1 tablespoon water, and the dry spices: 1 tablespoon coriander powder, 1/2 teaspoon red chili powder, 1/2 teaspoon turmeric powder, and 1/4 teaspoon black pepper powder.

Heat oil in a kadhai (wok) over medium heat.

Fry the urad dal vadi until lightly golden and remove them to cool in cold water.

In the same kadhai, add more oil and fry 1 teaspoon fenugreek seeds until fragrant.

Add the chopped baigan and sauté for about 5 minutes, covering occasionally to help cook them faster.

Add the prepared spice paste to the baigan and sauté to combine.

Add salt to taste and cover the kadhai, cooking for 7-8 minutes until the baigan is tender.

Check the consistency and add a little water if the gravy is too thick, then fold gently.
