6 green plantains
2 ripe plantains
fresh fish (snapper)

Prepare the pot with water and bring it to a boil.

Peel 6 green plantains and 2 ripe plantains.

Add the peeled plantains to the boiling water and cook for 20 minutes (15 minutes for green, 5 minutes for ripe).

Season the cut fish (snapper) with salt and black pepper.

Slice the fish to allow the salt to penetrate.

Husk the coconut and break it in half.

Grate the coconut to extract the milk.

Strain the coconut to separate the milk from the water, using about 1 cup of coconut milk.

Pan fry the fish until semi-cooked (about 50%).

Add the fish to the coconut milk and let it simmer for 10 minutes.

Add okra and bell pepper after 10 minutes of simmering.

Stir frequently to prevent curdling of the coconut milk.
