Spinach Pancakes

2 cups fresh spinach, chopped
1 cup all-purpose flour
1 cup milk
2 large eggs
1/2 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (for cooking)

In a blender, combine the chopped spinach, milk, and eggs. Blend until smooth.

In a large bowl, whisk together the flour, baking powder, salt, and black pepper.

Pour the spinach mixture into the dry ingredients and stir until just combined. Do not overmix.

Heat a non-stick skillet over medium heat and add a little olive oil.

Pour 1/4 cup of the batter onto the skillet for each pancake.

Cook for 2-3 minutes or until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
