1

Chop tomatoes and place them in a blender.

2

Chop a large red capsicum, remove the membrane and seeds, and add to the blender.

3

Add two scotch bonnet peppers and a little bit of water to the blender.

4

Blend the mixture until smooth.

5

Slice and dice red onions into small pieces.

6

Place a heavy-bottomed pot over medium-high flame.

7

Add one-third cup of cooking oil to the pot and then add the diced onions.

8

Stir in bay leaves, thyme, and curry powder, cooking for about one minute to toast the spices.

9

Add tomato puree and tomato paste to the pot, along with salt, and stir until fully combined.

10

Cover the pot and let it come to a boil, then reduce the flame to low and cook for about 10 minutes until thickened.

11

After 8 minutes, check the tomato stew and cover it for another 2-3 minutes if needed.

12

Wash two cups of basmati rice several times until the water runs clear to remove starch.

13

Check on the tomato stew; it should be thick and ready.

Add two cups of chicken stock and an additional two cups of water to the pot.
