1 medium red onion
1 teaspoon dried thyme
4 cloves garlic
1 tablespoon ginger
1 tablespoon curry powder
2 chicken bouillon cubes

3 cups long grain parboiled white rice
2 tablespoons tomato paste

Season and cook goat meat with red onion, dried thyme, garlic, ginger, curry powder, and salt. Cover and steam without water for about 10 minutes.

Add enough water to cover the meat and cook until fully cooked, saving the stock for later.

Cut fresh tomatoes, red onions, and red bell peppers, and roast them with olive oil at 425°F for about 15 minutes.

Add some stew to the goat meat and put it in the oven at 250°F to absorb the stew.

After about 25 minutes, fluff the rice and add butter and additional stew on top, covering the pot to allow the butter to melt.

Cover the pot and increase the heat to high to smoke the rice for about 5 minutes.
