Nigerian Jollof Rice

Originating from the Senegambian region, Jollof Rice is a beloved West African dish that has become a staple in Nigerian cuisine. Traditionally served at celebrations and gatherings, it symbolizes unity and festivity. Each country has its own version, with Nigeria's often featuring a rich tomato base and a distinctive smoky flavor. Today, Jollof Rice is enjoyed globally, celebrated for its vibrant flavors and versatility.

long-grain rice

Add meat and chicken to the pot.
Blend spices together including onion, ginger, banero pepper, red pepper, and tomato paste.
Add the blended spices to the meat along with seasoning powder, curry powder, salt, and bay leaf; stir together.
Cook in an electric cooker for a few minutes before adding water.
Blend the tomato, onion, ginger, banero pepper, and red pepper for the stew.
Pour the blended mixture into the pot and boil for about 30 minutes.
Add more water to the meat to create stock for cooking the rice.
Fry the meat separately.
Parboil the rice.
Fry the stew by adding onion to hot oil, then add tomato paste and stir for 2 minutes.
Add boiled tomato, seasoning cubes, curry powder, salt, and crayfish; stir and cover to cook.
Add meat stock to the stew and mix.
Add parboiled rice to the stew and mix everything together; add more water if needed.
Add green beans, carrots, and stir; cover with foil to cook.
Add minced pepper and spring onion; stir everything together.
Add butter and cover again with foil for 2 minutes; then the jollof rice is ready.
