3 big potatoes
1 onion chopped
3 tbs of annatto/achiote oil
cheese of your choice (cheddar and feta)
extra oil for frying

Peel and cut the potatoes. Cook the potatoes until soft and let them cool.

In a frying pan, heat up the achiote or annatto oil over medium heat. Add the chopped onion and fry until soft.

Mash the potatoes when they are cooled along with the sautéed onions.

Once the potatoes have been mashed, start making the patties. Fill the patties with cheese and close them.

Heat the frying pan with a little oil and start frying the patties until golden brown.

Serve hot.
