Llapingachos

5-6 large potatoes
2 Tbsp of oil
½ cup of diced white onion
2 Tsp of achiote molido
1 cup of mozzarella or Oaxaca cheese
Salt as needed

Peel & cut potatoes

Boil potatoes until soft or when you can put a fork through it and it breaks easily

Add the oil to a medium-heat pan, then once heated add onions and achiote

While the onions are cooking drain potatoes and mash together

Combine mashed potatoes with onion mixture then let sit at room temperature area for at least an hour

After an hour make about a Tbsp size ball then make dents in the middle fill with cheese

Close the llapingachos by pushing the dough together and then flattening it

Cook until both sides are toasted
