Chop 4 eggs into small pieces.

Chop 1/2 onion and 1 piece of capsicum.

In a bowl, add the chopped onions and capsicum.

Add a little salt, a little pepper, and some curry masala powder to the bowl.

Add 2-3 heaping teaspoons of garlic mayonnaise to the mixture.

Mix all the ingredients together gently.

Add the chopped eggs to the mixture and mix everything gently again.

Check for seasoning and add more mayonnaise if desired.

Chop a few mint leaves and add them to the egg mixture.

Plate the salad mixture.

Take fresh lettuce leaves and place them on a slice of bread.

Spread the egg salad mixture on top of the lettuce on the bread.
