Chop up your vegetables (onion, garlic, ginger, scotch bonnet, thyme, spring onion, carrot, tomato, bell peppers) however you like, as you're going to be blending it later.
In a skillet, heat oil and add turmeric powder and fish seasoning; stir it in (this step is optional).
Fry the chopped vegetables together in the skillet for a few minutes.
Add the deboned saltfish to the skillet with the fried vegetables.
Optionally, add butter to the mixture.
To make the dough, use shortcut pastry; the creator mentions they will show how to make it properly in another video.
Roll out the pastry but do not overwork it; roll it to a desired thickness, preferably thin but not too thin that it rips apart.
Use a small bowl to press into the dough to cut out circles and repeat until all the dough is used.
Optionally, blend the filling to make it smoother before putting it into the pastry.
Place the filling on one side of the dough circle, fold it over, and use a fork to press down the edges.
Use either milk or egg to outline the edges to help them stick better.
Repeat the filling and sealing process until all patties are assembled.
Before placing the patties in the oven, gently brush them with either egg or milk.
Bake the patties in the oven for about 30 to 35 minutes until done.
