50 grams finely diced white onion
1 tomato (approximately 70 grams, roughly chopped)
750 milliliters water (3 cups)
1 teaspoon salt
1 teaspoon coriander powder
1 teaspoon Kashmiri chili powder
0.5 teaspoon turmeric powder
50 grams unsalted butter
10 grams freshly grated garlic (3 cloves)
10 grams freshly grated ginger (small piece)
0.5 tablespoon cumin seeds
3 green chilies (sliced halfway up, optional)
fresh coriander (for garnish)

Wash 250 grams of brown Dal and set aside to drain.

In a pot, add 750 milliliters of water and bring it to a boil on heat setting 9.

Add the drained lentils to the boiling water.

Reduce the heat to setting 4 and add 1 teaspoon salt, 1 teaspoon coriander powder, 1 teaspoon Kashmiri chili powder, 0.5 teaspoon turmeric powder, and the chopped tomato.

Mix everything together and cover the pot. Let it simmer for 15 to 16 minutes without stirring.

After 15 minutes, remove the lid to check the Dal. It should be cooked with a little water remaining and the tomatoes softened.

Turn off the heat and set the Dal aside.

In a saucepan, add 50 grams of unsalted butter and allow it to melt on heat setting 6.

Once melted, add the finely diced onions and fry until golden brown, about 3 to 4 minutes.

Add 0.5 tablespoon cumin seeds, 10 grams of grated ginger, and 10 grams of grated garlic to the onions. Cook for about 1 minute, stirring continuously to avoid burning.

Bring the cooked Dal back to the hob on heat setting 4 and add the tempering mixture (Turka) from the saucepan.

Add the sliced green chilies (if using) and mix everything together.

Cover the pot again and let it simmer for an additional 45 minutes to allow the flavors to meld.

After 45 minutes, turn off the heat and remove the lid. Stir in fresh coriander for garnish.
