shiitake mushrooms

Button mushrooms are more widely available and less expensive.
Soak the dried shiitake mushrooms in warm water for 15-20 minutes, pressing them down to keep them submerged.
Soak the cloud ear fungus in warm water for 10-15 minutes.
Rinse the goji berries and soak them in cold water for 10-15 minutes.
Rinse the Chinese sausage and set it aside.
Remove the skin from the chicken using a paper towel.
Debone the chicken drumsticks and cut the meat into medium-sized chunks.
Add about 1/2 oz of sliced ginger and 1 tbsp of cooking wine to the chicken and mix.
Drain and rinse the soaked cloud ear fungus and shiitake mushrooms, squeezing out excess water.
Slice the Chinese sausage into 1/4-inch thick slices at an angle.
Cut shallots into 2-inch segments and set aside the green parts for later.
