2 tablespoons sauce from fermented tofu
1 tablespoon light soy sauce
2 tablespoons salt
3 cloves garlic, chopped
0.5 teaspoon sugar
1 thumb-sized young ginger, julienned
2 stems spring onion, lightly smashed
1 kilogram whole chicken, cut into bite-sized pieces
2 tablespoons corn flour
1 tablespoon sesame oil

Prepare the marinade by mashing 3 pieces of fermented tofu with 2 tablespoons of its sauce.

Add 1 tablespoon of light soy sauce, 2 tablespoons of salt, 3 cloves of chopped garlic, 0.5 teaspoon of sugar, 1 thumb-sized julienned young ginger, and 2 lightly smashed stems of spring onion to the tofu mixture and mix well.

Add 1 kilogram of cut chicken to the marinade and mix thoroughly using your hands (make sure to wash hands first).

Add 2 tablespoons of corn flour to the chicken and mix well to ensure a smooth texture.

Spread the marinated chicken on a steaming plate and drizzle with 1 tablespoon of sesame oil.

Let the chicken marinate for at least 1 hour.

Prepare to steam the chicken by ensuring the water is boiling.

Place the chicken in the steamer and cover with a lid, steaming on high heat for approximately 12 to 15 minutes.
