3 egg yolks
3/4 cup of golden sugar
pinch of salt
1 & 1/2 cups of milk
1 & 1/2 cups of heavy whipping cream
1 freshly grated whole nutmeg
1 tsp of vanilla extract

to a bowl, add your 3 egg yolks, sugar and salt, & whisk until smooth & pale in color

to a small pot, add the milk, heavy cream and freshly grated nutmeg

allow it to heat up. once you see it about to simmer, remove the pot from the heat before it starts to boil

slowly add the heated milk mixture to the eggs mixture little by little, stirring as you add it

add the vanilla extract

run the custard through a strainer into a container that can be sealed

ensure the custard has cooled down before placing it in the fridge for a few hours, preferably overnight

once it is cold, add it to your ice cream maker, following the directions for your maker (mine took around 20 minutes)

quickly remove the mixture from your ice cream maker into a container for ice cream & freeze it overnight before serving
