Cauliflower Steaks with Lemon Tahini Sauce

1 large head of cauliflower
2 tablespoons olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/4 cup tahini
2 tablespoons lemon juice
2 tablespoons water
1 clove garlic, minced
1 tablespoon fresh parsley, chopped

Preheat the oven to 425°F (220°C).

Remove the leaves from the cauliflower and slice it into 1-inch thick steaks.

In a large bowl, mix olive oil, salt, black pepper, garlic powder, and smoked paprika.

Brush both sides of the cauliflower steaks with the olive oil mixture.

Place the cauliflower steaks on a baking sheet lined with parchment paper.

Roast in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and tender.

While the cauliflower is roasting, prepare the lemon tahini sauce by whisking together tahini, lemon juice, water, minced garlic, and a pinch of salt in a bowl until smooth.

Once the cauliflower is done, remove it from the oven and let it cool slightly.

Drizzle the lemon tahini sauce over the roasted cauliflower steaks and garnish with fresh parsley before serving.
