Flip the cauliflower steaks and season the other side with the same spices.

Place the seasoned cauliflower steaks in the oven for 10 to 12 minutes.

After 10 to 12 minutes, flip the cauliflower steaks and cook for another 10 to 12 minutes.

While the cauliflower is roasting, prepare the chimichurri sauce by blending together 1 cup of extra virgin olive oil, 2 cloves of garlic, 2 handfuls of cilantro, 2 slithers of red onion, 2 tablespoons of sherry vinegar, 1 teaspoon of oregano, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Taste the chimichurri sauce and add the juice from half a lemon, then refrigerate for 1-2 hours.

Check the cauliflower steaks after 11 to 12 minutes; they should be bright, tender, and charred at the tips.
