1 cup raw rice
1 tbsp oil
1 tbsp ghee
1 tsp chana dal
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp fennel seeds
2 finely chopped onions
10 cloves garlic
3 green chilies
1 tsp salt
1/2 tsp turmeric powder
1 tbsp red chili powder
1 tsp cumin powder
2 tbsp coriander powder
3 finely chopped tomatoes
fresh curry leaves
handful of chopped coriander leaves
3 cups water

Soak 1/2 cup of horse gram for at least 8 hours or overnight.

In another bowl, soak 1 cup of raw rice for at least half an hour.

Heat a pressure cooker and add 1 tbsp of oil and 1 tbsp of ghee.

Once hot, add 1 tsp of chana dal, 1 tsp of mustard seeds, 1 tsp of cumin seeds, and 1 tsp of fennel seeds; roast until fragrant.

Add 2 finely chopped onions and sauté until soft.

Add 10 cloves of slightly pounded garlic and 3 slit green chilies; sauté until onions are soft.

Season with 1 tsp of salt, 1/2 tsp of turmeric powder, 1 tbsp of red chili powder, 1 tsp of cumin powder, and 2 tbsp of coriander powder; mix well.

Add 3 finely chopped tomatoes and mix until they are mushy.

Add the soaked horse gram to the onion-tomato mixture and stir to combine.

Add fresh curry leaves and a handful of chopped coriander leaves; mix well.

Add 3 cups of water and bring to a rolling boil.

Add the soaked raw rice and mix well.

Close the pressure cooker and cook for about 2 whistles on medium flame.

Let the pressure release naturally after about 10 minutes and then open the lid.
