Clean the squid thoroughly and slice into rings.
In a bowl, mix 1¼ cup cornstarch, ½ tsp salt, ½ tsp white pepper, and 1 tsp garlic powder.
In another bowl, combine ½ tsp salt, ½ tsp white pepper, 1 tsp garlic powder, 2 tsp calamansi juice, 1 tsp Tabasco or Sriracha, and 1½ tbsp cornstarch to create the batter.
Dip each squid ring into the batter, allowing excess to drip off.
Coat the squid rings in the flour mixture, ensuring they are fully covered.
Heat 1 cup canola oil in a deep fryer or large pot to 350°F (175°C).
Fry the squid rings in batches until golden brown, about 2-3 minutes per batch.
Remove the fried squid and drain on paper towels.
Serve hot with your choice of dipping sauce, such as ketchup, mayo-sriracha, or vinegar dip.
