2 cups atta (whole wheat flour)
1 tbsp oil
½ tsp salt
Water to knead
4 onions
1 tsp salt
1 cup besan (gram flour)
1 tbsp chopped ginger
1 tbsp chopped green chilies
2 tbsp chopped coriander leaves
½ tsp cumin seeds
½ tsp crushed coriander seeds
¼ tsp crushed carom seeds
1 tbsp red chili powder
½ tsp garam masala powder
1 tbsp dry mango powder
Salt to taste
Ghee or oil to cook parathas

Add salt and oil to the flour and add sufficient water to knead to a very soft dough.

Rest the dough for 15 minutes.

Meanwhile, finely chop the onions. Add 1 tsp salt and mix well. Allow to rest for 10 minutes. Squeeze out all the water from the onions.

Heat 1 tbsp oil in a pan. Add the crushed spices and allow to turn fragrant.

Add the chopped chilies and ginger and sauté till fragrant.

Add the besan and roast the besan till it is golden and fragrant.

Remove from fire, add the powdered spices and onions, salt to taste and mix well.

Knead the dough again for a minute.

Break the dough into lemon-sized balls. Flatten and stuff with 2 tbsp stuffing.

Seal the balls and roll out the paratha.

Cook the paratha on a medium hot tawa and serve with chutney, achar, butter, or yogurt.
