Shirazi Salad
Cultural Context
Originating from the vibrant cuisine of Iran, Shirazi Salad is a refreshing side dish often served with grilled meats and rice. Named after the city of Shiraz, this salad celebrates the fresh produce of the region, showcasing a balance of flavors and textures. Today, it is enjoyed not only in Iran but also in various Middle Eastern cuisines, often adapted with local ingredients.
Start by making the dressing in a large bowl.
Add 3 tablespoons of salt and freshly cracked black pepper to the bowl.
Pour in 3 tablespoons of olive oil and 3 tablespoons of lime juice into the bowl.
Whisk the dressing together until mixed and lightly emulsified.
Chop the Persian cucumbers finely and add them to the bowl.
Dice the red onion finely and add it to the bowl with the cucumbers.
Slice the tomatoes in half, seed them to remove excess moisture, and then finely dice them before adding to the bowl.
Optionally, chop green peppers and add them to the salad for extra crunch.
Add 2 tablespoons of chopped fresh cilantro (or a combination of herbs) to the bowl.
Sprinkle in some dried mint and mix all the ingredients together thoroughly.
