Grind 1 tablespoon fennel, 1 teaspoon black pepper, 1 teaspoon cumin, 1 tablespoon coriander seeds, 1 small piece of nutmeg, 1 large cardamom pod, 2 small cardamom pods, 7-8 cloves, and 1 small piece of soft spice until smooth.

Add 2 tablespoons nihari masala and salt to the ground spices, mixing well.

In a pan, heat 1 cup oil and add 1 tablespoon ginger-garlic paste, sautéing until fragrant.

Add chicken to the pan and sauté until browned.

Strain the ground spice mixture into the pan with the chicken, mixing well.

Add a little water to the pan and sauté until the oil separates from the mixture.

Pour in 2 glasses of water and bring to a boil, then reduce heat to simmer for 10-15 minutes until chicken is cooked.

Mix 2-3 tablespoons flour with 1 cup water to create a smooth paste, then add this mixture to the pot to thicken the sauce.

Let the dish simmer for an additional 10-15 minutes.

In a separate pan, heat 1/2 cup oil and fry 1 sliced onion until brown, then add red chili powder for tempering.

Serve the nihari hot, garnished with the fried onions.
