1.5 cups red kidney beans
3 cloves garlic

1 tablespoon fermented seed
4-5 cups water
2.5 cups long grain rice
1 teaspoon salt
1 teaspoon all-purpose seasoning
0.5 teaspoon black pepper
2 scotch bonnet peppers
fresh thyme
1 can Grace coconut milk
1 tablespoon butter

Wash 1.5 cups of red kidney beans and add to a pot.

Crush 3 cloves of garlic and add to the pot along with optional ginger.

Add 1 tablespoon of fermented seed to the pot.

Pour in 4-5 cups of hot water and cover the pot.

Cook the beans on medium heat for about 1 hour, adding more water if needed.

After 1 hour, check the beans; if they're soft, add 1 can of Grace coconut milk and stir.

Add 2.5 cups of washed long grain rice to the pot.

Add 1 teaspoon of salt, 1 teaspoon of all-purpose seasoning, 0.5 teaspoon of black pepper, 2 scotch bonnet peppers, and fresh thyme to the pot.

Add 1 tablespoon of butter and stir to combine.

Cover the pot and let it come to a boil for 4-5 minutes.

After boiling, reduce the heat to low to medium and let it cook for 30 minutes, stirring occasionally.

After 30 minutes, fluff the rice with a fork, ensuring the scotch bonnet peppers remain intact.
