Soak chana overnight until soft.
Wash the chana well.
Transfer chana to a cooker, add half teaspoon salt and half glass of water.
Boil until soft, around three whistles.
After boiling, let the remaining water evaporate completely.
Add a few drops of oil to the chana and mix well.
Take a butter paper sheet and spread some chana on it.
Cover with another butter paper and flatten gently using a wooden press or roller.
Repeat for all chana.
Preheat the air fryer and place a parchment sheet inside.
Add the flattened chana pieces to the air fryer.
Lightly brush or spray oil on top of the chana.
Sprinkle the spice mix: chart masala, amchur powder, red chili powder, and Maggi magic masala.
Air fry at 190° for 7 minutes.
After 7 minutes, check the chana; it should be crispy and golden.
Mix the chana once, brush a little oil again, and air fry for another 5 minutes at 190°.
Transfer the roasted chana to a bowl.
Add chopped onion, tomato, and fresh coriander.
Sprinkle chart masala, red chili powder, jeera powder, and a dash of lemon juice.
Add a little more Maggi magic masala for extra flavor.
