Strain the mixture to remove excess liquid, retaining the starch.
Whisk 1 egg in a separate bowl.
Combine the strained potato-onion mixture with the egg, 1 tablespoon of flour, salt, and black pepper.
For the filling, chop the remaining 1/2 small onion and mix with chopped mushrooms, smoked ham, and uncured bacon.
Form the potato dough into circles, place a spoonful of filling in the center, and fold over to seal.
In a skillet, cook the dumplings until golden brown, about 3-4 minutes on each side.
Serve hot with sour cream.
