Jollof Rice

1 medium-size onion
2 teaspoons minced garlic
1/2 teaspoon dried thyme
2 cups uncooked basmati rice
200 grams tomato puree sauce
3 cups chicken stock
1 teaspoon paprika powder
1 teaspoon white pepper powder
1 teaspoon salt
1/2 teaspoon chicken bouillon
1/4 kilogram mixed veggies (carrots, peas, green beans)

Put all together the chicken legs and spices and mix.

Start coating the chicken legs (or thighs if you prefer) with the mixture.

In a wide pan, put 2-3 tablespoons of vegetable oil.

Put the chicken legs and brown them.

In that same pan, put chopped 1 medium-size onion.

Add 2 teaspoons of minced garlic.

Add 1/2 teaspoon of dried thyme.

Sauté them for 2-3 minutes on medium-low heat.

Add 2 cups of uncooked basmati rice and stir for around 2 minutes.

Pour 200 grams of tomato puree sauce.

Then add 3 cups of chicken stock (or water).

Add 1 teaspoon of paprika powder.

Add 1 teaspoon of white pepper powder.

Add 1 teaspoon of salt.

Add 1/2 teaspoon of chicken bouillon.

Then add the chicken legs and bring to a boil.

Put the pan into the oven and cook for 20 minutes at 176 degrees Celsius (350 F).

Take it out from the oven and sprinkle over the veggies (carrots, peas, and green beans) with about 1/4 kilogram.

Cook for another 10-15 minutes.
