Traditionally made by incorporating oil into the dough, it results in a flaky, soft texture that pairs beautifully with curries and stews. This dish reflects the fusion of indigenous, African, and Indian influences in Guyanese cuisine, making it a staple in many households. Whisk together all-purpose flour, sugar, salt, and baking powder in a bowl until well incorporated.
Add lukewarm water gradually and form a dough, being careful not to over knead.
Cover the dough with a damp paper towel and let it sit for 15 minutes.
Divide the dough into desired sizes and form individual dough balls.
Let the dough balls sit for an additional 5 minutes.
In a bowl, mix room temperature salted butter and lard together.
Roll out each dough ball and spread the butter and lard mixture over the top, then sprinkle with flour.
Fold the dough, tucking the ends in and giving it a twist before tucking it into the center.
Heat a roti pan or flat pan on medium-low heat and oil it well before adding the roti.
Roll out the roti and place it on the pan, cooking for about 2 to 2.5 minutes on each side on low heat.
Brush the top of the roti, then flip it to cook the other side until it has some brown bits, as preferred.
Shake the cooked roti in a mug or clap with your hands to fluff it up.
