Originating from the diverse culinary traditions of Guyana, Oil Roti is a beloved flatbread often enjoyed with various dishes. Traditionally made by incorporating oil into the dough, it results in a flaky, soft texture that pairs beautifully with curries and stews. This dish reflects the fusion of indigenous, African, and Indian influences in Guyanese cuisine, making it a staple in many households. Today, it is commonly served at family gatherings and special occasions, showcasing its cultural significance and adaptability.

Coconut oil is a healthier fat option.
Mix flour, baking powder, salt, vegetable shortening, and vegetable oil in a bowl using fingers.
Gradually add water until a soft dough forms, adjusting based on texture preference.
Knead the dough for 2 minutes, cover with wet plastic, and let it rest for 30 minutes.
After 30 minutes, sprinkle flour and knead for another 2 minutes.
Divide the dough into 4 equal pieces using a dough cutter.
Roll each piece thin, brush with vegetable oil, and sprinkle flour on top.
Create a cone shape by rolling the dough and sticking the ends together.
Cover with plastic wrap and let sit for another 10 minutes.
Roll the dough thin again and place it onto a roti pan over low heat.
Brush the dough with vegetable oil and press the edges while cooking.
Flip the roti after 1-1.5 minutes, pressing down to ensure even cooking.
Remove from the pan and clap the roti to release air pockets and create flakes.
