1 cup diced potatoes
1/2 cup grated carrots
1/2 cup diced pumpkin
1/2 cup diced onions
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 cup peas
1 tsp dried sage
1/2 tsp dried thyme
1/2 tsp dried oregano
1 lb corned beef, shredded
2 cups short crust pastry
1 egg yolk (for egg wash)

Heat a medium pan on the stove and pour in some olive oil.

Add potatoes and carrots to the pan and cook for about 2 minutes, stirring gently.

Add pumpkin and onions to the pan and cook for another 2 minutes, stirring gently.

Add garlic, salt, and pepper to the mixture.

Add peas and herbs (sage, thyme, oregano) to the pan and stir gently, cooking for 1 more minute.

Set the mixture aside to cool slightly, then transfer it into a bowl for easier mixing.

Add corned beef to the bowl and gently stir to combine all ingredients.

Use a small plate to cut circles from the short crust pastry, making four circles.
