2 cups grated carrots
1/2 cup crushed pineapple, drained
1/2 cup chopped walnuts (optional)

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

In another bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined.

Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
