Peel and cut 3 medium-sized carrots into smaller pieces.
Use a food processor to chop the carrots until they are small.
In a bowl, add 3 eggs, 1/2 cup cane sugar, 1/3 cup avocado oil, 1/3 cup unsweetened applesauce, 1/3 cup blended cottage cheese, 2 teaspoons apple cider vinegar, and 2 teaspoons vanilla extract.
Whisk the wet ingredients together until well combined.
In another bowl, combine 1 cup oat flour, 1 cup almond flour, 2/3 cup cassava flour, 2 teaspoons baking powder, 1/4 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon, 1/2 teaspoon dried ginger, and 1/4 teaspoon nutmeg.
Whisk the dry ingredients together until well combined.
Add the dry ingredients to the wet ingredients and mix until you have a thick batter.
Fold in 1/2 cup shredded carrots, 1/2 cup golden raisins, and 1/3 cup shredded coconut until combined.
Line a muffin pan with parchment paper liners.
Using a 1/3 cup batter scoop, fill each muffin cup almost to the top for high domes.
Preheat the oven to 425°F and bake the muffins for 5 minutes.
After 5 minutes, reduce the oven temperature to 350°F and bake for an additional 20-22 minutes until golden brown.
While muffins bake, prepare the cream cheese glaze by blending 2 ounces room temperature cream cheese, 2 teaspoons room temperature butter, 1/2 teaspoon vanilla, 1/2 teaspoon lemon juice, 2 tablespoons almond milk, and a pinch of salt until smooth.
Add 1/2 cup powdered cane sugar to the glaze and blend until well incorporated.
Once muffins are baked and cooled, pour the cream cheese glaze over the top.
Optionally, dust with cinnamon, sprinkle toasted coconut, and add crushed pecans.
