160 gm all purpose flour
1 tsp baking powder
1/2 tsp baking soda

80 gm carrot
35 gm pecans

Preheat the oven to 390 F.

Combine 120 ml lukewarm milk and 2 tsp vinegar and mix well.

Add 90 gm brown sugar, 60 ml oil, and 2 tsp vanilla essence. Whisk until the sugar dissolves completely.

Add 160 gm all purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon powder, and 1/8 tsp salt. Mix until everything is well combined.

Add 80 gm grated carrot and 35 gm chopped pecans. Stir just enough to combine, being careful not to overmix.

Scoop out the mixture and evenly divide the batter into muffin liners.

Sprinkle sugar on top of the batter in the muffin liners.

Bake at 390 F for 8 minutes. Then, without opening the oven, lower the temperature to 350 F and bake for another 10-12 minutes.

Let the muffins cool completely.

Garnish with chopped pecans and grated carrot.
