750 gm basmati rice
200ml groundnut oil
5 cardamom
6 marathi moggu
3 star anise
1 mace flower
6 cloves
2 inch cinnamon sticks
1 stone flower
3 bay leaves
1 tsp fennel seeds
3 chopped onion
2 chopped tomato
2 tsp garlic & ginger paste
5 fresh green chilli paste
1 CUP mint leaves
1 CUP coriander leaves
2 tsp red chilli powder
1/2 tsp turmeric powder
2 tsp coriander powder
250 ml curd
salt to taste
1 cup Fresh Green Peas
1 tsp biryani masala powder

Heat groundnut oil in a large pot.

Add cardamom, marathi moggu, star anise, mace flower, cloves, cinnamon sticks, stone flower, bay leaves, and fennel seeds. Sauté until fragrant.

Add chopped onions and cook until golden brown.

Stir in chopped tomatoes and cook until soft.

Add garlic & ginger paste and fresh green chilli paste, and sauté for a few minutes.

Add the mushrooms and cook until they release moisture.

Stir in the mint leaves, coriander leaves, red chilli powder, turmeric powder, coriander powder, and salt. Mix well.

Add the curd and fresh green peas, and stir to combine.

Add the basmati rice and enough water to cook the rice. Bring to a boil.

Cover and simmer until the rice is cooked and the liquid is absorbed.

Once done, fluff the biryani and serve hot.
