1 lb beef (chuck or sirloin), cut into bite-sized pieces
2 tbsp vegetable oil
1 onion, chopped
3 cloves garlic, minced
1 tbsp ginger, minced
2-3 tbsp red curry paste
1 can (14 oz) coconut milk
1 cup beef broth
2 cups mixed vegetables (bell peppers, carrots, zucchini)
2 tbsp fish sauce
1 tbsp brown sugar
1/2 tsp salt
1/4 tsp black pepper
Fresh basil leaves for garnish
Lime wedges for serving

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion and sauté until translucent, about 5 minutes.
