Whole wheat flour adds fiber and nutrients.
Grab some water in a Tupperware and put it in the freezer to make ice water.
Add 1 cup of all-purpose flour to the food processor.
Add 1/2 teaspoon of paprika, 1/4 teaspoon of garlic powder, 1/4 teaspoon of onion powder, and salt.
Add 1/4 teaspoon of celery seed to mimic the flavor of Pepperidge Farm Goldfish crackers.
Pulse the flour and seasonings together until combined.
Add 8 oz of cheddar cheese and pulse until incorporated into the flour mixture.
Add 6 oz of cold salted butter and pulse until you see pea-sized clumps.
Gradually add 1 tablespoon of ice cold water until a dough forms, starting with 1/2 teaspoon.
Shape the dough into a ball and wrap it tightly in cling wrap.
Chill the dough in the fridge for 30 to 60 minutes.
Preheat the oven to 350°F (177°C).
Lightly flour a piece of wax paper (or parchment paper) to roll out the dough.
Remove the dough from the fridge, and flatten it into a disc for easier rolling.
Roll the dough out between two sheets of non-stick paper to about 1/4 to 1/8 inch thickness.
Cut out fish shapes using a cookie cutter and place them on a parchment-lined baking sheet.
Space the cutouts about half an inch apart on the baking sheet.
Collect scraps, re-roll the dough, and chill again if necessary before cutting out more shapes.
Bake the crackers for 10 to 15 minutes, checking at 10 minutes for doneness.
Remove from the oven and let cool completely before tasting.
