Prepare 400 g of skinned haddock on a foiled baking sheet.
Cut lemon into about four slices and arrange them on top of the haddock, squeezing the remaining juice over it.
Top the haddock with butter before wrapping it in foil.
Bake in a fan oven at 180°C for 15 to 18 minutes.
Heat 1 tablespoon of olive oil and butter on high in a pan.
Add 2 chopped onions and stir.
Add 2 teaspoons of cumin, 1 teaspoon of ground coriander, and 1 teaspoon of turmeric to the onions.
Add 1 clove of garlic, 2 bay leaves, 300 g of basmati rice, pepper, and salt to the pan.
Pour in 600 ml of vegetable stock and bring to a gentle simmer for 12 to 15 minutes.
