1

Peel the potatoes and wash them.

2

Place the potatoes in cold salted water and bring to a boil.

3

Cook the potatoes until they are very soft, about 15 minutes after boiling point.

4

Check if the potatoes are cooked by inserting a knife; if it comes out clean, they are done.

5

Drain the water from the potatoes and return them to the pan.

6

Mash the potatoes for about 3 minutes using a potato masher.

7

Add butter and black pepper to the mashed potatoes and mix well.

8

Add a small amount of milk to the mashed potatoes at the end and mix until smooth.

9

Heat a frying pan and add a little sunflower oil.

10

Add the sausages to the pan and cook them slowly, flipping often for about 7-8 minutes until browned and cooked through.

11

Remove the sausages from the pan but do not clean it; use the same pan for the onion gravy.

12

Slice one white onion and one red onion and add them to the pan with any leftover sausage flavors.

13

Add garlic, English mustard, corn flour, brown sauce, ketchup, Worcestershire sauce, black pepper, salt, and water to the onions in the pan.

14

Cook the onions on medium heat for about 5-6 minutes until they are slightly soft but still have some crunch.

15

Add the mustard, brown sauce, and ketchup to the onions and mix well.

16

Add water to the mixture, or use stock if preferred, and stir.

17

Add corn flour to thicken the gravy, adjusting with more water or corn flour as needed.

18

Once the gravy thickens, remove it from the heat.

19

Reheat the mashed potatoes in the microwave if necessary.

20

Serve the sausages on a bed of mashed potatoes, add marrow fat peas, and pour the onion gravy over everything.
