Salmon Burger

3 salmon fillets
1/2 red onion

1/2 to 1 cup plain bread crumbs

2 teaspoons unsalted butter
1/2 to 1 cup mayo
1 tablespoon Dijon mustard
diced cilantro

arugula

Remove the skin from the salmon fillets.

Slice the salmon into cubes and grind them down into tiny bits or chunks.

Dice 1/2 a red onion as small as possible.

Chop equal amounts of parsley into tiny bits.

Season the salmon with Old Bay seasoning, black pepper, onion powder, garlic powder, honey, and Tony's Creole seasoning.

Add 1/2 to 1 cup of plain bread crumbs to the salmon mixture for thickness and texture.

Mix the salmon mixture and adjust seasoning to taste, adding more of the same seasonings if necessary.

Form the salmon mixture into six patties using the palm of your hand as a measurement.

Heat olive oil in a cast iron skillet over medium heat and place the patties inside to cook.

Cook the patties for about 4 to 5 minutes on each side until browned.

Make aioli by mixing 1/2 to 1 cup of mayo, 1 tablespoon of Dijon mustard, Old Bay seasoning, Tony's Creole seasoning, honey, and diced cilantro.

Add 2 teaspoons of unsalted butter to the skillet after the patties are cooked through and remove them from the skillet.

Toast brioche buns in the skillet.

Dress arugula with olive oil and lemon juice (no seasoning).

Spread aioli on the bun, add arugula, and top with the salmon burger.
