Recipe Information
Salmon Burger
Remove the skin from the salmon fillet.
Cut the salmon into smaller pieces for consistent chopping.
Place the salmon pieces into a food processor.
Add 1 teaspoon of salt and 2 egg yolks to the processor.
Pulse the mixture until it has a mix of fine and chunky pieces, ensuring some salmon bites remain.
Form patties using a measuring cup (3/4 cup per patty) to achieve approximately 200 grams each.
Spray parchment paper and your hands with cooking spray to prevent sticking.
Carefully form the patties without overworking them, and place them on the parchment paper.
Refrigerate the patties for at least 1 hour to firm up before grilling.
