Start by making the marinade: combine 1/4 cup soy sauce, 2 to 3 tablespoons olive oil, a handful of scallions, 2 habanero peppers, 4 cloves garlic, ginger, 1 tablespoon vinegar, 1/2 teaspoon nutmeg, 1 teaspoon dry thyme, 1 tablespoon allspice, and 1 tablespoon brown sugar in a blender. Blend until smooth and add juice of 1 lime, then blend again.
Julienne cut 1 carrot and thinly slice green cabbage. Cut green onions into smaller pieces.
Peel and slice 1 mango into thin strips. Combine all vegetables in a bowl.
Add 2 tablespoons whole milk Greek yogurt, 1 to 2 tablespoons honey, fresh ground pepper, salt to taste, and juice of 1 lime to the vegetable mixture. Mix well and set aside.
Peel 3 plantains and slice them thinly using a mandolin. Prepare a Dutch oven with peanut oil for frying.
Fry the plantain slices until they are dark golden brown, then set aside and salt to taste.
Marinate white fish fillets (such as cod or snapper) in the jerk marinade for a while, then set aside in the fridge.
Prepare the batter by combining all-purpose flour, 1 tablespoon allspice, 1 teaspoon nutmeg, and ground cinnamon in a large bowl. Slowly add beer until you reach a thick, liquidy consistency.
Dredge the marinated fish in flour, then dip in the beer batter, and coat again in flour before frying.
Fry the battered fish fillets until golden brown, being careful to drop them away from you in the hot oil.
Toast a bio bun and spread the jerk mayo (made from Japanese mayo and jerk marinade) on the bottom slice.
Layer the fried fish, pickled red onions, and mango slaw on the bun, then top with more jerk mayo before closing the sandwich.
