Prepare the ingredients: 6 salmon fillets, 1/2 onion finely chopped, 2 teaspoons fresh thyme, 3 cloves garlic, 4-5 tablespoons honey, 2 tablespoons wet jerk marinade, and various seasonings.
Mix the seasonings in a bowl: 1 tablespoon jerk powder, 1 tablespoon all-purpose seasoning, 1 teaspoon onion powder, 2 teaspoons paprika, 2 teaspoons garlic powder, and 1 teaspoon black pepper.
Wash the salmon in lemon juice and pat dry with a paper towel.
Add 2 tablespoons of wet jerk marinade to the salmon and pat the seasoning onto the fillets, ensuring they are well coated.
Heat 2 tablespoons of oil in a pot until hot.
Add the salmon to the pot, skin-side down, and fry for 4-5 minutes on each side, cooking in batches of three fillets at a time.
Remove the salmon from the pot once browned and set aside.
In the same pot, add the chopped onion and sauté for 15 seconds.
Add the minced garlic and sauté for another 15 seconds.
In the bowl used for seasoning, add over 4 tablespoons of warm water and the remaining seasonings, mixing well.
Pour the mixture into the pot, ensuring the stove is turned down to low heat, and add the remaining wet jerk marinade.
Allow the sauce to simmer for 2 minutes, then increase the heat to medium-high until it comes to a boil.
Add the honey to the pot and reduce the heat again, then add the scallion and thyme, letting it cook for another 2 minutes without covering the pot.
Return the salmon to the pot, basting it with the sauce, and let it cook for 7 minutes on low heat until the sauce is sticky.
Once finished, turn off the stove and plate the salmon, noting that it looks restaurant-quality.
Taste the salmon, noting its delicious flavor and suggesting serving it with mashed potatoes, rice, or vegetables.
