Wash and clean the salmon fillets, then scale them.
Finely chop 3 cloves of garlic and 2 teaspoons of ginger.
Finely chop a small amount of onion.
In a bowl, combine 1 teaspoon each of Cajun seasoning, garlic powder, black pepper, Old Bay seasoning, smoked paprika, onion and salt seasoning, and all-purpose seasoning.
In another bowl, mix together 1/2 cup honey, 1/2 cup orange juice, 2 teaspoons chili seeds, 2 tablespoons soft brown sugar, 1 tablespoon dark soy sauce, and a small amount of wet jerk marinade.
Season the salmon fillets with a bit of oil and massage the seasoning into them.
Pat the salmon fillets dry with a paper towel to remove excess water.
Heat 3 tablespoons of olive oil in a skillet over medium heat.
Add two salmon fillets to the skillet, skin-side down, and cook for 3-4 minutes until crispy.
Carefully flip the salmon and cook for another 3-4 minutes until browned, then remove from the skillet.
In the same skillet, add the remaining garlic and sauté for 10 seconds.
Add the chopped onion and sauté for another 10 seconds.
Pour in the orange juice and stir, then add the remaining seasonings, chili flakes, and wet jerk seasoning.
Add the soft brown sugar and dark soy sauce, and let simmer for 30 seconds.
Add the honey to the sauce and mix well, allowing it to thicken for 2-3 minutes.
Baste the cooked salmon with the sauce and let it cook for an additional 3-4 minutes.
Add lemon pieces and orange peel to the salmon before serving.
