Measure 125 g of flour and 100 g of water in a bowl.
Stir the flour and water together with a wooden spoon and let it sit for 15 minutes.
Add the rest of the flour, water, yeast, honey, and baking salt to the bowl.
Mix the ingredients in a stand mixer with a dough attachment on low speed for about 5 minutes until combined.
Cover the dough and let it rest for 20 minutes.
After 20 minutes, fold the dough a few times and cover it again.
Let the dough rise for 1 hour until doubled in size.
Prepare a proofing basket by coating it with flour.
Transfer the dough to a floured surface and shape it into a ball.
