Mix flour, yeast, and salt in a large bowl until combined.

Cover the bowl with plastic wrap and let it rise at room temperature for 12-18 hours.
Preheat the oven to 450°F (232°C) with a Dutch oven inside for 30 minutes.
Turn the dough out onto a floured surface and shape it into a ball.
Carefully remove the hot Dutch oven and place the dough inside, sprinkling cornmeal on the bottom.
Cover with the lid and bake for 30 minutes.
Remove the lid and bake for an additional 15-20 minutes, until golden brown.
Cool on a wire rack before slicing.
