Combine 3 1/2 cups flour, 2 teaspoons sugar, 2 teaspoons instant yeast, and 2 teaspoons salt in a standing mixer with a paddle attachment.
Mix until the dough becomes slightly sticky and shaggy.
Cover the bowl and let it rest for 30 minutes.
After 30 minutes, use damp hands to stretch and pull the dough around.
Repeat the stretch and fold every 30 minutes twice, then let it rise for another hour.
Preheat the Dutch oven in the oven at 500°F (260°C) for about an hour.
Once the dough has risen, gently pull it together without deflating it, pinching the bottom to create a seam.
Transfer the dough onto a floured parchment paper and shape it gently into a round loaf.
Score the top of the loaf with a sharp knife or razor in a cross pattern.
Add a couple of ice cubes to the hot Dutch oven (optional) before placing the dough inside.
Cover the Dutch oven with the lid and bake for 30 minutes.
Remove the lid and bake for an additional 10 minutes or until the bread is deeply golden brown.
