1 1/4 cups (150 g) all-purpose flour
1 1/2 tsp baking powder
1/4 tsp kosher salt
1 egg white
1 tbsp cold water
1/4 cup everything bagel seasoning

Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.

Add the cottage cheese to a food processor. Whip the cottage cheese for about 1 minute until completely smooth with no lumps.

In a medium mixing bowl, whisk together all-purpose flour, baking powder, and salt. Add the cottage cheese and mix until combined. Don't overmix! The dough will be a bit sticky.

Dust a clean countertop with flour and turn the dough out onto the surface. Knead for about 1 minute, until you have a well-shaped ball of dough.

Use a bench scraper or knife to cut the dough into 4 equally sized smaller pieces – each weighing about 90 grams.

Roll each ball into a 10 inch rope on your lightly floured surface. Start by rolling in the middle, then work your way out to the sides for an evenly shaped rope.

Tuck the ends of the rope together to form circles.

Make an egg wash: whisk together the egg white and water in a small, shallow bowl. Put the everything bagel seasoning in a separate shallow bowl in a thin layer.

Dip the bagels into the egg wash on each side, then dip each side into the seasoning.

Place the bagels, evenly spaced out, on the parchment paper lined baking sheet.

Bake for 20-25 minutes on the center oven rack, until the crust is deep golden brown. I found the sweet spot to be 22 minutes in my oven!

Let the bagels cool for 5-10 minutes, then you can slice them in half and dig in.
