turmeric powder - 1 tbsp
salt - 1/2 tsp
garam masala - 1 tbsp
crushed ginger - 2 inch
green chili - 4 pcs (or as required)
sugar - 4 tbsp
bay leaves - 3 pcs
cinnamon stick - 2 inch
cloves - 4 pcs
cashew nuts
raisins (kismis)
water - 4 cups (or 4 and 1/2 cups for aged rice)

Rinse short grain rice gently 2-3 times to remove excess starch.

Spread out the washed rice and dry it under a fan for some time.

Heat 4 tbsp of clarified butter (ghee) until melted.

Add 1/2 tsp salt, 1 tbsp garam masala, crushed ginger, and 4 pcs slitted green chili; mix well.

Heat 1 tbsp ghee in a pan; add bay leaves, cinnamon, cloves, and crushed green cardamom; fry briefly.

Fry cashew nuts until light brown on low flame, then add raisins and fry well.

Add the yellow rice to the pan and gently mix on low flame for 5 minutes.

Pour in 4 cups of water (or 4 and 1/2 cups for aged rice) and bring to a boil.

Cover with a lid and cook on low flame, gently mixing once in between.

Cook for about 12 minutes until the rice is cooked and non-sticky.
