1

Boil a pot of water seasoned with salt.

2

Add the fish to the boiling water and cook for 5 minutes.

3

Remove the fish and leave it to drain in a colander.

4

Heat vegetable oil in a deep pan until warm.

5

Add annatto seeds to the oil and cook for 5-6 minutes until the oil turns yellow.

6

Add chopped bell peppers, onions, and garlic to the pan; cook for about 10 minutes, seasoning with salt, black pepper, and brown cumin.

7

Add the cooked fish to the pan and cook for 20-25 minutes at medium temperature until all the liquid has cooked out.

8

Turn off the heat and add chopped parsley and cilantro; mix and leave to cool down.

9

Peel and chop previously cooked potatoes (cooked in the microwave for 10 minutes).

10

Chop feta cheese and plantain.

Combine all the ingredients into a large bowl and mix well.

12

Once done, place on a cooling rack; can be eaten hot or cold, preferably at room temperature or slightly warm.
