Heat 2 tablespoons of oil in a pan over medium-high heat.

Stir in 1 teaspoon of kashmiri red chilli powder, 1/2 teaspoon of turmeric powder, 1 teaspoon of ground coriander, and 1/2 teaspoon of ground cumin; cook until tomatoes are pasty.

Add 2 whole green chilies and 1 can of cooked chickpeas (rinsed).

Stir for 2 minutes on high heat, then add 1/2 cup of hot water, 1 teaspoon of salt, and 1/2 teaspoon of garam masala powder; cover on low heat for 2 minutes.

Add 2 chopped green peppers and a splash of water if needed; cover for 1 more minute.

Make space in the pan and crack 2 eggs into it; optionally sprinkle with red chili flakes and kasuri methi.

Cook on medium-low heat until the egg whites are set; serve sunny side up or turn the eggs for a coating of masala.
