1.5 kg chicken drumsticks with skin
3-4 bay leaves
1 tbsp black peppercorns
2 tsp brown sugar
2 tbsp chopped garlic
1 tbsp ginger paste
1 cup soy sauce
1 cup apple cider vinegar
1 tsp white pepper powder
1 onion finely chopped
2 tbsp garlic finely chopped
1 spring onion (white and green separated)
1 tsp corn flour

Marinate chicken with apple cider vinegar, soy sauce, bay leaves, black peppercorns, ginger paste, chopped garlic, white pepper powder, and brown sugar for 4-5 hours or overnight.

If chicken isn't submerged, add an extra cup of water.

Heat a pan and add 1 tbsp of white oil.

Add marinated chicken and brown for 3-4 minutes on each side.

Remove browned chicken and set aside.

In the same pan, add 1 tbsp of white oil, chopped onions, and garlic; cook for 3-4 minutes until slightly brown.

Add the white part of the spring onion and cook for another minute.

Add the marinade to the pan and bring to a boil.

Add the browned chicken pieces to the boiling marinade, cover, and cook for 15-20 minutes until tender, stirring occasionally.

Remove chicken pieces and set aside.

Add corn flour slurry to the marinade and cook on high flame for 5 minutes to thicken the sauce.

Adjust seasoning if needed, then pour the sauce over the chicken and garnish with spring onion greens.
