Tagliare le melanzane a fette spesse circa 3-4 cm.

Preparare un’emulsione con qualche cucchiaio di prezzemolo, uno spicchio d’aglio spremuto, sale e abbondante olio extravergine di oliva.

Grigliare le melanzane in un barbecue o in una piastra di ghisa per circa 5 minuti per lato. Salare quindi le melanzane e continuare la cottura chiudendo il coperchio del barbecue per altri 25 minuti a 180-200 °C. NB: se non si dispone di un barbecue con coperchio è sufficiente trasferire le fette di melanzana in forno (preriscaldato a 200 °C).

Aprire il barbecue (o il forno) e testare la cottura delle melanzane forandole con una forchetta (deve entrare senza sforzo). Cospargerle con l’emulsione di olio, aglio e prezzemolo preparata in precedenza.
